When to plant Sage in Liverpool

Sow thinly around 19th February - 5th March on fine seed compost. Cover with a light dusting of compost or vermiculite. Keep the tray warm, bright, and just moist until it germinates.

• A bought plant is quicker. Softwood cuttings are another route.

When seedlings are large enough to handle, prick them out from 12th March into small pots. Keep the strongest plants and handle them gently to avoid damaging the roots.

From 16th April, move plants outside for a few hours each day over about 10 days. Keep them sheltered and bring them in if cold nights are forecast.

Set plants in their final spot from 30th April in full sun and free-draining soil. Space 45 cm apart. Water in, then let the soil dry between waterings.

• In a pot, stand it in a rain-shadow in winter. Pots stay wet in winter rain and that is how they rot.

From 5th May to 3rd July, pinch out soft growing tips to keep the plant bushy. This is a first-year pinch, not a yearly prune. Never cut into old bare wood.

• On established plants, prune lightly in mid to late spring. Never into old wood.

Pick a few leaves from 20th May once the plant is well rooted. Take tips for the best flavour. Leave enough growth for the plant to thicken. Keep this light pick through 2nd August.

• Once established, you can pick all year. Flavour is best on spring and summer growth.
